HOLIDAY FIX: LEMON HERB SALT
Ciao'd while nibbling on peppermint bark. 'Cuz it's the holidays. 'Cuz why not?
Christmas and Hanukkah may be just around the corner but there's still time to make food gifts like the SUPER SIMPLE AND QUICK lemon herb salt. Bursting with bright flavor, it lifts chicken, fish and vegetables, adds a spark to salad dressings, and puts more pop in popcorn. Sprinkle the salt on foods before or after cooking.
Makes 1 cup
3/4 cup coarse salt such kosher salt or sea salt (I use Baleine)
2 tablespoons finely grated lemon zest
3 teaspoons dried oregano
3 teaspoons dried basil
3 teaspoons dried rosemary
1/2 teaspoon red pepper flakes (optional)
In a medium bowl, combine salt, lemon zest, oregano, basil, rosemary, and red pepper, if using. Mix well, pressing the salt with the back of a spoon to release the flavor. Store in air-tight container. The salt will last up to 1 year though it will lose some of its flavor over time.
