SAUTÉED SPINACH AND GARLIC

This simple and healthy dish not only tastes #dolcevitadelish, it adds vibrant color to any plate it adorns, too. 

Serves 4

3 tablespoons olive oil
1 pound spinach (12 cups whole leaves), trimmed, rinsed, leaves coarsely chopped
1 clove garlic, minced
2 tablespoons grated Parmesan cheese (optional)
Kosher salt and freshly ground black pepper

In a large sauté pan over medium heat, heat the olive oil. Add the garlic and sauté until softened, 1 to 2 minutes. Do not let the garlic brown. Add the spinach and sauté until the spinach has wilted and the water has evaporated, 3 to 5 minutes. Stir in the Parmesan cheese, if using. Season with salt and pepper, to taste.
